Here it is...


Bread Pudding


Collard Greens

I wouldn't change one thing about this meal at all. It was really, really GOOD. It was a bit time intensive, but that was mostly due to my cutting my own chickens in half, having no onions pre-cut and in the freezer, and a few kids that wanted to help and/or needed attention. I made enough chicken for 6, and followed the recipes for the bread pudding and greens and fed 8 of us too well on that amount! I have leftovers of each; not that I mind that one bit.

I must have been too bothered to think straight, there were a couple moments that had Megan (my 15 yr old) and me falling over with laughter. The first was Ian coming into the kitchen and asking for a drink. I was in the middle of cutting a chicken in half and wanted to tell him there was chicken all over my hands, but what came out was "There's hand all over my chicken." I realized what I said and started laughing and yelled. "Can you imagine?? Hands ALL OVER my chicken!" --had to be there for that one ... the other was telling Megan that Ian had helped me by holding the bowl as I put in the ingredients for "Essence of Emeril" to which we immediately yelled "NO!" and started in with the hysterical laughter again. That should have been Emeril's Creole Essence ... ah well, at least I had the right mixture on the chicken ;o)
